Calvados distilled by Didier Lemorton at La Baill.e F.tu in Mantilly, in the Domfrontais Region of Normandy • Distilled from pears (up to 80%) and apples • Single distillation occurs on a traveling, wood-fired column still • Aged 3–5 years • Aromas of sage, stewed apple and pear, and brioche transition to a drying palate of tobacco and cinnamon.
