Jim Beam Devil’s Cut is a Kentucky straight bourbon made by extracting the rich liquid trapped inside the barrel wood — a proprietary process that pulls out the bourbon held in the staves, then blends it with extra-aged bourbon and bottles it at 90 proof.

The “devil’s cut” is the spirit absorbed into the barrel wood during aging — the counterpart to the “angel’s share” lost to evaporation. By recovering it and blending with extra-aged stock, Jim Beam produces a deeper, more robust bourbon with rich color, aroma, and character.
