Castle & Key Restoration Kentucky Rye Whiskey is the debut whiskey release from Castle & Key Distillery in Frankfort, Kentucky — a restoration of the historic Old Taylor Distillery site by the new ownership team. The Restoration name reflects both the site’s preservation and the team’s long-term commitment to traditional Kentucky whiskey production. Distillation began in 2016 with first barrels filled the same year; the Restoration Rye was first released in 2020 after four years of patient aging.

Castle & Key is one of the most architecturally significant distillery restorations in Kentucky, with the historic Col. E.H. Taylor distillery site (originally built in 1887) painstakingly restored by the new ownership. The Restoration Rye represents the project’s first major release — a Kentucky rye whiskey patient enough to take four years before market entry.
