Missouri and Kentucky are the two primary American white oak growing regions for whiskey cooperage, and the Ozark Forest in Missouri produces oak with different characteristics than Kentucky’s more commonly used wood. The Missouri oak tends toward a slightly denser grain and different tannin and flavor compound profile than Appalachian-grown American oak. Ten months in virgin Missouri oak — a meaningful finishing period — allows the Ozark wood character to integrate with the sherry and bourbon cask foundation of the primary maturation, producing a pot still whiskey with a genuinely distinctive American oak character that the standard range doesn’t offer.
