Kaiyo Whisky The Sheri Second Edition is a Japanese single malt whisky from Kaiyo Whisky — aged in Mizunara oak and finished in Oloroso sherry casks. The Second Edition refines the formula of the original Sheri, extending the sherry finish to deepen the dried fruit and spice character while retaining the distinctive sandalwood and incense notes from Mizunara.

Kaiyo (“ocean” in Japanese) is produced in Japan and aged at sea in a rocking motion on vessels crossing ocean routes — a method borrowed from the 19th-century practice of aging spirits in barrels during long ocean voyages, when the constant movement was believed to accelerate maturation. The Mizunara oak base contributes the characteristic Japanese whisky aromatics: sandalwood, incense, and coconut. The Oloroso sherry finish adds dried fruit, dark chocolate, and walnut.
