Avèze Gentiane Liquéur is produced in the Auvergne region of central France from the yellow gentian root (Gentiana lutea) harvested by hand from the volcanic Massif Central mountains — one of the few remaining hand-harvested gentian operations in France. Gentian root is the primary bittering agent in many classic aperitifs; Avèze builds the entire liqueur around it at 20% ABV.
Gentiana lutea grows in the alpine meadows of the Massif Central and Pyrenees, and requires 15–20 years to develop roots large enough for harvest. The hand-harvested roots produce an intensely bitter, earthy, and floral spirit with turmeric-like color. Avèze is the benchmark expression of gentian as a standalone liqueur rather than a botanical component, making it a reference for bartenders exploring aperitif and amaro cocktail work.
Tasting Notes
