Barsol Moste Verde Italia Pisco

Barsol Mosto Verde Italia is the magnum opus of artisanal Peruvian pisco — distilled from a partial-fermentation wine of Italia grapes rather than the standard full fermentation, resulting in higher residual sugars, more intense fresh-grape aromas, and a richer, fuller-bodied pisco. Distilled in small batches in a copper pot still in the Ica Valley.

Mosto Verde is the pinnacle pisco style — distilling from partially-fermented “green must” wine (with around 3-5% ABV remaining sugar) rather than the fully-fermented wine used for standard pisco. The result is significantly more aromatic intensity and a smoother, more concentrated character than the standard Italia. Barsol’s Mosto Verde Italia is one of the benchmark expressions of the style.
